Beet Pasta with UWEN

INGREDIENTS

Step 1

Cook the spaghetti according to the instructions on the package. Once cooked, transfer the spaghetti to a pan. Do not drain the water from the pasta, as we will need it later.

Step 2

Peel and cut the cooked beetroot into small cubes.

Step 3

In a blender, combine the beetroot cubes, ricotta cheese, and 60 ml of water. Blend until smooth.

Step 4

Add the yeast flakes, salt, and spices to the blender and blend again until smooth.

Step 5

Pour the prepared sauce into the pan with the spaghetti.

Step 6

Add 100 ml of the pasta water and stir over low heat until the sauce thickens.

Step 7

Serve the beet pasta in bowls, garnish with walnuts and additional yeast flakes.
