Vegetable Soup with Noodles and UWEN

Step 1

Begin by cutting the onions, carrots, and mushrooms into desired shapes.

Heat olive oil in a pot with a thick bottom over medium heat. Add the yeast flakes and sauté for 5 minutes until fragrant.

Pour in the vegetable broth and bring it to a boil. Add spices according to your taste.

Add the rice noodles, broccoli florets, and chopped mushrooms to the pot. Cook over medium heat until the noodles are tender. Then, stir in the coconut milk and tomato paste. Continue cooking for another 3 minutes to let the flavors meld together.

Serve the vegetable soup in bowls, garnish with yeast flakes, and enjoy!
