Avocado Sandwich with Spinach and Tofu

INGREDIENTS
- 1/2 tomato
- 1/4 lemon or lime
- 1/4 small onion
- Salt to taste
- 2 tbsp. UWEN nutritional yeast flakes
- 100 g tofu
- A few sun-dried tomatoes
- A few spinach leaves
- 2 slices of bread
Step 1
Prepare the guacamole. In a blender or using a fork, mash the avocado, tomato, and finely chopped onion. Add lemon or lime juice and salt to taste.
Step 2
Mix the yeast flakes into the guacamole until well combined.
Step 3
Lightly sauté the spinach leaves in a pan and add the yeast flakes.
Step 4
In another pan, fry the tofu (previously cut into pieces) with spices and yeast flakes. Add sun-dried tomatoes.
Step 5
Toast two slices of bread.
Step 6
Spread a layer of guacamole on one slice of bread, then top it with the fried tofu, stewed sun-dried tomatoes, and spinach with flakes. Place the second slice of bread on top.
Step 7
