Quinoa Bowl with FLAKES

INGREDIENTS
- 1 cup pre-boiled quinoa
- Several sprigs of arugula
- 8 cherry tomatoes
- 1 avocado, cut into cubes
- 6 small broccoli florets
- 100 g roasted pumpkin
- 3 tbsp. UWEN nutritional yeast flakes
- FOR THE DRESSING:
- 2 tbsp. olive oil
- 1 tbsp. Dijon mustard
- 1 tbsp. lemon juice
- 1 tsp. honey
- Salt and black pepper to taste
Step 1
Place the broccoli florets in boiling water and cook for 2-3 minutes until tender but still firm.
Step 2
In a bowl, assemble the arugula, quinoa, broccoli, roasted pumpkin, cherry tomatoes, and avocado cubes.
Step 3
In a separate bowl, whisk together olive oil, Dijon mustard, lemon juice, and honey to make the dressing.
Step 4
Pour the dressing over the bowl of ingredients and sprinkle with yeast flakes.
